This coffee is processed using a black honey method, where a significant portion of the cherry mucilage is retained during drying to enhance sweetness, texture, and clarity.
Shaded pre-drying beds are used on-site to slow moisture loss and allow for controlled fermentation, preserving aromatic complexity and a silky mouthfeel. Indigenous Ethiopian varieties #74158, #74112, and #74110 contribute to the coffee’s elegant structure and layered profile.
